This is the very first chicken pot pie I've ever made. I'm happy to say that it wasn't difficult. But, of course, that's because I used jiffy all-purpose mix and frozen vegetables, which made the recipe really easy to make. The first time I made this was back in Marsh when I was taking my CNA course. That was a busy time. I had to be able to make dinners really quickly. I was gone from 7:15am - 3:00pm and Mr. Pribs was flying at nights, so he was usually gone from 5pm to 1am. It was a weird schedule...one I don't want to return to.
This was one of those easy and quick meals that made my evenings less busy and put a meal on the table before Mr. Pribs even knew I was home! If I ever have a job outside of the home, I'll probably be using this recipe a lot more. I don't know how some people do it. I really don't. How do two people work full time (both outside the home), spend time together, have proper meals, keep the house in one piece and not spend a lot of money? I don't know. I really don't know.
