Peppermint M&M Chocolate Bark

We're getting a head start on Christmas this year.  Call us (well, maybe me, because it was my idea) crazy, but we set up our Christmas tree in October.  Don't hate.  We needed the extra light in the living room.   Or whatever excuses you'll take, I'll give them to you. :)

We made this bark a few months ago.  I was craving mint chocolate and so we made some!  Luckily Mr. Pribs was able to take it to work the next day so we wouldn't consume it all ourselves and gain 50 pounds over the next week.  One of his co-workers mentioned that it would make a good Christmas treat....almost as if to tell us in a sneaky way that we shouldn't be making this stuff yet.  Whatever.  He ate it, so...that's kind of giving us mixed signals there.

We used:

12 ounces dark chocolate, chopped, or chocolate chips

12 ounces white chocolate, chopped, or white chocolate chips

1 cup mint m&ms

1/4 teaspoon mint extract


1) Melt dark chocolate and pour into a square baking dish lined with aluminum foil.  Place in freezer for 10 minutes...or until frozen.

2.)  Melt white chocolate and stir in the mint extract.  Pour on top of the frozen dark chocolate and scatter the M&M's on top.  Place in freezer until frozen.

3.) Remove chocolate from pan and cut until random pieces.

4.) Enjoy!
