Chicken Florentine

Wednesday, June 24, 2015

Today was the first day in weeks that I didn't feel like I wasn't dying from the humidity and heat.
In fact, I didn't use the AC unit ONCE today. (That's huge)

Silas and I went for a short walk up to the store and gas station and I didn't break out in a sweat. (That's a first).

And to top it off, I made the BEST chicken florentine for dinner tonight!  I don't know that I'd ever had chicken florentine before tonight, but any recipe that has chicken or pasta in it is usually a winner in my book (!!!!)

The key ingredients in this recipe are the PARMESAN and GARLIC SALT.  Do not leave those out!

(I didn't cut the chicken in the correct shapes, but who still tastes the same?!)

Recipe adapted from HERE

1/2 lb. chicken
1 tsp. garlic salt
1 1/2 cups of fresh spinach
1/2 cup of parmesan cheese
1/4 cup of milk
2 teaspoons butter
1 pound of bowtie pasta
Cut the chicken breast into bite size pieces.  Grill it with a little bit of salt and garlic salt.
On low heat, mix butter, milk, parmesan, spinach and garlic salt in a small saucepan until heated thoroughly.
Cook pasta until done.
Combine the chicken, sauce and pasta.
