Chicken, Strawberry & Spinach SaladTuesday, July 07, 2015
Good thing we have two blueberry bushes in our backyard, because we have three bags of frozen blueberries in our freezer still leftover from last summer. So this was a good reason to use some of them!
This was the recipe I used (adapted from this recipe):
1/2 lb. chicken breast
1 cup strawberries
1 cup blueberries
1 oz. sliced almonds
2 cups of fresh spinach
1/4 cup of parmesan cheese
Grill chicken breast and season with salt/pepper.
Cut strawberries in fourths.
Combine chicken breast, fruit, almonds, spinach and cheese.
