Single Serving Coffee Red Velvet Cake

I despise the taste of coffee.

I tried jumping on that bandwagon a long time ago.  And I just can’t seem to hang on.  I’m beginning to think that it’s an acquired taste – like beer.  But I can’t seem to acquire it.  Just like I can’t seem to acquire the taste of beer.

Sidenote: Despite what you may think, no one bled during the making of this recipe.  

Looks can be deceiving, I know.  You’re just going to have to trust me.

Whose idea was it to acquire taste anyway?  Why torture yourself in the process?  If you don’t like it, put it down and move on.

I learned at an early age that I didn’t like coffee.  I think I was like 5 or something, back when my sister and I were homeschooled.  During “science class” my mom decided to teach us that just because something LOOKS the same, doesn’t mean it TASTES the same.  For this particular experiment she used coffee and pepsi.  One person drank a sip of coffee and the other person drank a sip of the pepsi.  Guess who got the coffee?

You bet.

The experiment hypothesis was proven TRUE.  Just because something looked the same, it definitely didn’t taste the same.  Which is why my sister swallowed all of her drink, and mine barely made it into my mouth!

I can still remember…looking down at the floor (that was carpeted) and spewing that NASTY bitter drink out of my mouth.  It went everywhere.

I bet my mom was so happy.

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. For cakes: combine all of the dry and wet ingredients in separate bowls. Add into each other until just combined.
  3. Pour half a cup of mixture each into 2 well greased ramekins.
  4. Bake for 13 minutes. Allow to cool before removing from ramekins.
  5. For Icing: combine milk and sugar and top the cooled cakes with it. Stack the cakes and ENJOY!

    Luckily, coffee flavored baked goods are way more delicious than the actual drink.

    Not one crumb of this treat ended up on the floor.

    *If you’d rather have traditional red velvet cake, you can use 1 tablespoon of water in place of the coffee
